Ingredients for chicken saltimbocca:
- Chicken breast fillets
- Air-dried ham, e.g. Parma ham or Serrano ham
- Fresh sage leaves
- salt and pepper
- toothpick
Step by step preparation of the chicken saltimbcocca:
- Wash the chicken breast fillets, pat dry, halve horizontally (cutting into slices about 2 cm thick), and flatten slightly. Season with salt and pepper.
- Fold a slice of Parma ham or Serrano ham and secure it with a toothpick and a sage leaf on the chicken fillet.
- Lightly grease the grill grate or rub it with a halved potato to prevent sticking.
- Place the chicken fillets on top and grill for 4-5 minutes, starting with the uncooked side.
- Turn over and grill on the topped side for about 2-3 minutes.
